Ground Beef & Potato Stew 🍲
I’m a little embarrassed by how much I love this dish… but it’s too delicious not to share!
🧅 Ingredients
- 1 lb (450g) ground beef
- 1 medium onion, chopped
- 2–3 garlic cloves, minced
- 3 medium potatoes, peeled and diced
- 2 carrots, sliced
- 1 green bell pepper, chopped
- 1 can (14 oz) diced tomatoes
- 3 cups beef broth
- 1 tsp paprika
- ½ tsp cumin
- ½ tsp black pepper
- Salt to taste
- 1 tbsp olive oil
🥘 Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, sauté until fragrant.
- Add the ground beef and cook until browned, breaking it apart with a spoon.
- Stir in paprika, cumin, salt, and pepper.
- Add the chopped bell pepper, carrots, and potatoes. Cook for 3–4 minutes, stirring occasionally.
- Pour in the beef broth and diced tomatoes. Bring to a boil, then reduce the heat to low.
- Simmer uncovered for 25–30 minutes, or until the potatoes are tender and the broth thickens slightly.
- Taste and adjust seasoning if needed. Serve hot with bread or rice.
🍛 Tip: Add a splash of Worcestershire sauce or soy sauce for an extra depth of flavor.
