Ground Beef & Potato Stew 🍲

I’m a little embarrassed by how much I love this dish… but it’s too delicious not to share!

Ground Beef & Potato Stew

🧅 Ingredients

  • 1 lb (450g) ground beef
  • 1 medium onion, chopped
  • 2–3 garlic cloves, minced
  • 3 medium potatoes, peeled and diced
  • 2 carrots, sliced
  • 1 green bell pepper, chopped
  • 1 can (14 oz) diced tomatoes
  • 3 cups beef broth
  • 1 tsp paprika
  • ½ tsp cumin
  • ½ tsp black pepper
  • Salt to taste
  • 1 tbsp olive oil

🥘 Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, sauté until fragrant.
  2. Add the ground beef and cook until browned, breaking it apart with a spoon.
  3. Stir in paprika, cumin, salt, and pepper.
  4. Add the chopped bell pepper, carrots, and potatoes. Cook for 3–4 minutes, stirring occasionally.
  5. Pour in the beef broth and diced tomatoes. Bring to a boil, then reduce the heat to low.
  6. Simmer uncovered for 25–30 minutes, or until the potatoes are tender and the broth thickens slightly.
  7. Taste and adjust seasoning if needed. Serve hot with bread or rice.
🍛 Tip: Add a splash of Worcestershire sauce or soy sauce for an extra depth of flavor.
