Ingredients:

  • 2 eggs
  • 1.5 cups milk
  • 1.5 cups water
  • 1 tablespoon sugar
  • 1 teaspoon yeast
  • 1 teaspoon baking soda
  • 3.5 cups flour
  • 1 teaspoon salt
  • 1 green or red pepper
  • 1 tomato
  • 1 potato
  • 120 grams cheese (avoid processed cheese)

Instructions:

1. Prepare the Batter:

  1. In a large mixing bowl, whisk the eggs.
  2. Add the milk and water to the eggs, stirring to combine.
  3. Mix in the sugar, yeast, and baking soda.
  4. Gradually add the flour, stirring continuously to prevent lumps.
  5. Add the salt and continue to stir until you achieve a smooth, lump-free batter.
  6. Let the batter rest for 15-20 minutes to rise.

2. Prepare the Vegetables and Cheese:

  1. Dice the green or red pepper and the tomato.
  2. Peel and grate the potato.
  3. Grate 120 grams of cheese (choose any type, but avoid processed varieties).

3. Combine the Batter and Ingredients:

  1. Gently fold the diced vegetables and grated cheese into the batter, mixing evenly.

4. Cook the Pancakes:

  1. Heat a pan or griddle over medium heat.
  2. Pour ladlefuls of the batter onto the hot surface to form pancakes.
  3. Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
