Delicious Salmon Patties Recipe

Ingredients:

  • 1 lb fresh salmon filet*
  • 3 tablespoons olive oil, divided
  • 1 ½ teaspoons garlic salt (adjust to taste; I recommend Lawry’s Brand)
  • ½ teaspoon black pepper (adjust to taste)
  • 1 medium yellow onion, finely diced (approximately 1 cup)
  • ½ red bell pepper, seeded and diced
  • 3 tablespoons unsalted butter, divided
  • 1 cup Panko bread crumbs
  • 2 large eggs, lightly beaten
  • 3 tablespoons mayonnaise
  • 1 teaspoon Worcestershire sauce
  • ¼ cup fresh parsley, finely minced

Preparation:

  1. Preheat the Oven: Set your oven to 425°F (220°C). Line a rimmed baking sheet with parchment paper or a silicone liner.
  2. Prepare the Salmon: Place the salmon filet in the center of the baking sheet, skin-side down. Drizzle with 1 tablespoon of olive oil, and season with garlic salt and black pepper. Bake uncovered for 10-15 minutes, depending on the thickness of the salmon, or until it is fully cooked. Remove from the oven, cover with foil, and let it rest for 10 minutes. Once cooled, use two forks to flake the salmon, discarding the skin and any bones. Set aside to cool to room temperature.
  3. Sauté the Vegetables: In a medium skillet over medium heat, add 1 tablespoon of olive oil and 1 tablespoon of butter. Once hot, add the diced onion and red bell pepper. Sauté for 7-9 minutes, or until the vegetables are golden and softened. Remove from heat.
  4. Mix the Ingredients: In a large mixing bowl, combine the flaked salmon, sautéed onion and bell pepper, Panko bread crumbs, beaten eggs, mayonnaise, Worcestershire sauce, garlic salt, black pepper, and minced parsley. Stir until thoroughly combined.
  5. Form the Patties: Using your hands, shape the mixture into patties, approximately 2 inches wide and ⅓ to ½ inch thick, using about a heaping tablespoon of the mixture for each patty.
  6. Cook the Patties: In a clean non-stick skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium heat until hot. Add the salmon patties in a single layer and sauté for 3-4 minutes on each side, or until they are golden brown and cooked through. If the patties brown too quickly, reduce the heat. Once cooked, transfer the patties to a paper towel-lined plate and repeat with the remaining oil, butter, and salmon cakes.
