Cheesy Mashed Potato Muffins π§π₯
βWhenever these are on the table, they disappear quicker than I can snag one for myself!β π
π₯£ Ingredients
- 3 cups mashed potatoes (leftovers work great!)
- 1 cup shredded cheddar cheese
- 2 eggs
- ΒΌ cup milk
- 2 tablespoons melted butter
- Salt and pepper, to taste
- 2 tablespoons chopped green onions (plus more for garnish)
- Optional: Β½ cup cooked bacon bits or diced ham
π©βπ³ Instructions
- Preheat oven to 375Β°F (190Β°C). Grease a muffin tin or line with parchment liners.
- In a large bowl, mix mashed potatoes, eggs, milk, melted butter, cheese, salt, pepper, and green onions until combined.
- Spoon the mixture into muffin cups, filling each about ΒΎ full.
- Sprinkle extra cheese on top for that golden, melty crust.
- Bake for 20β25 minutes, or until tops are lightly browned and set.
- Cool slightly before removing from the pan. Garnish with extra green onions and serve warm!
π‘ Tip: Perfect for using up leftover mashed potatoes! You can also add bits of cooked broccoli or jalapeΓ±os for extra flavor.
