White Chocolate Strawberry Cheesecake

Ingredients

Crust:

  • 1 ½ cups crushed graham crackers
  • ⅓ cup melted butter
  • ¼ cup refined sugar

Filling:

  • 450 g (16 oz) cream cheese, softened
  • 1 cup melted and cooled white chocolate
  • ½ cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1 large egg
  • 1 cup fresh strawberries, chopped

Topping:

  • ½ cup fresh strawberries, chopped
  • ¼ cup white chocolate chips, melted

Preparation

  1. Preheat the Oven: Set your oven to 350°F (175°C).
  2. Prepare the Crust: In a bowl, combine the crushed graham crackers, melted butter, and refined sugar. Press this mixture evenly into the bottom of a 9-inch springform pan.
  3. Make the Filling: In a separate bowl, beat the softened cream cheese until smooth. Gradually add the melted white chocolate, granulated sugar, and vanilla extract, mixing until well combined.
  4. Incorporate the Egg: Add the egg, mixing thoroughly after each addition. Gently fold in the chopped strawberries.
  5. Bake: Pour the cream cheese mixture over the prepared crust and spread it evenly. Bake for 45-50 minutes or until set.
  6. Cool: Turn off the oven and allow the cheesecake to cool gradually for about an hour.
  7. Chill: Refrigerate the cheesecake for at least 4 hours, preferably overnight.
  8. Serve: Before serving, top with additional chopped strawberries and melted white chocolate chips.
