Unstuffed Cabbage Roll Casserole

I’m 60 years old and only tried this for the first time recently — the flavors are incredible!

Ingredients

  • 1 lb (450 g) ground beef or turkey
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 small head cabbage, chopped (about 6 cups)
  • 1 can (14 oz / 400 g) diced tomatoes
  • 1 can (8 oz / 225 g) tomato sauce
  • 1 cup (200 g) cooked rice
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 cups (200 g) shredded cheddar or mozzarella cheese
  • 2 tbsp chopped parsley or green onions (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch (23×33 cm) baking dish.
  2. In a skillet, heat olive oil. Add onion and sauté 3 minutes, then stir in garlic and ground beef. Cook until browned and fully cooked. Drain fat.
  3. Add cabbage, tomatoes, tomato sauce, rice, paprika, oregano, salt, and pepper. Mix well and simmer 10–12 minutes until cabbage softens slightly.
  4. Transfer mixture to the baking dish. Top evenly with shredded cheese.
  5. Cover loosely with foil and bake for 25–30 minutes. Remove foil and bake another 10 minutes until bubbly and golden.
  6. Cool slightly before serving and garnish with parsley or green onions.
💡 Tips:
• Use ground turkey or chicken for a lighter version.
• Add a dash of red pepper flakes for gentle heat.
• Substitute brown rice or cauliflower rice if you prefer low-carb.
• Freezes beautifully — perfect for meal prep!
