Unstuffed Cabbage Roll Casserole
I’m 60 years old and only tried this for the first time recently — the flavors are incredible!
Ingredients
- 1 lb (450 g) ground beef or turkey
- 1 tbsp olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 small head cabbage, chopped (about 6 cups)
- 1 can (14 oz / 400 g) diced tomatoes
- 1 can (8 oz / 225 g) tomato sauce
- 1 cup (200 g) cooked rice
- 1 tsp smoked paprika
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 cups (200 g) shredded cheddar or mozzarella cheese
- 2 tbsp chopped parsley or green onions (for garnish)
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×13-inch (23×33 cm) baking dish.
- In a skillet, heat olive oil. Add onion and sauté 3 minutes, then stir in garlic and ground beef. Cook until browned and fully cooked. Drain fat.
- Add cabbage, tomatoes, tomato sauce, rice, paprika, oregano, salt, and pepper. Mix well and simmer 10–12 minutes until cabbage softens slightly.
- Transfer mixture to the baking dish. Top evenly with shredded cheese.
- Cover loosely with foil and bake for 25–30 minutes. Remove foil and bake another 10 minutes until bubbly and golden.
- Cool slightly before serving and garnish with parsley or green onions.

• Use ground turkey or chicken for a lighter version.
• Add a dash of red pepper flakes for gentle heat.
• Substitute brown rice or cauliflower rice if you prefer low-carb.
