Ingredients

For the Chicken:

  • 1 whole chicken (1.5-2 kg)
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 4 garlic cloves, smashed
  • 1 teaspoon dried thyme or fresh thyme sprigs
  • 1 orange, sliced

For the Orange Glaze:

  • 1/2 cup fresh orange juice
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 2 tablespoons butter
  • 1 teaspoon grated orange zest
  • 1/4 teaspoon ground ginger (optional)

Preparation

  1. Prepare the Chicken: Preheat your oven to 200Ā°C (400Ā°F). Rinse the chicken thoroughly and pat it dry. Rub the skin with olive oil and season generously with salt and pepper. Stuff the cavity with smashed garlic and orange slices.
  2. Make the Orange Glaze: In a small saucepan, combine the orange juice, honey, soy sauce, butter, orange zest, and ginger (if using). Heat over medium until the butter melts and all ingredients meld together. Allow to simmer for 3-5 minutes.
  3. Apply the Glaze: Place the chicken in a roasting pan and pour half of the orange glaze over it, ensuring an even coating.
  4. Roast the Chicken: Roast the chicken in the preheated oven for 60-90 minutes, basting with the remaining glaze halfway through for added flavor and moisture.
  5. Let the Chicken Rest: Once cooked, remove the chicken from the oven and let it rest for 10-15 minutes before carving. This resting period ensures the juices redistribute for maximum tenderness.
