Ingredients:
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup milk
- 6-8 ripe plums, pitted and sliced
- 1 tablespoon lemon juice
- 1 tablespoon granulated sugar (for sprinkling)
Instructions:
1. Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease and flour an 8- or 9-inch round cake pan.
2. Prepare the Plums:
Toss the sliced plums with lemon juice and set them aside.
3. Mix Dry Ingredients:
In a medium bowl, whisk together the flour, baking powder, and salt.
4. Cream the Butter and Sugars:
In a large mixing bowl, beat the softened butter with the granulated sugar and brown sugar until light and fluffy.
5. Add Eggs and Vanilla:
Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
6. Combine Wet and Dry Ingredients:
Gradually add the dry mixture to the wet ingredients, alternating with the milk. Start and end with the dry ingredients. Mix until just combined, being careful not to overmix.
7. Arrange the Plums:
Pour the batter into the prepared pan, smoothing the top. Arrange the plum slices over the batter in a circular pattern.
8. Sprinkle with Sugar:
Lightly sprinkle the plums with 1 tablespoon of granulated sugar.
9. Bake:
Bake for 45-50 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
