- 1/2 cup long-grain white rice
 - 4 cups whole milk (divided)
 - 1/2 cup granulated sugar
 - 1/4 tsp salt
 - 1/2 tsp ground cinnamon
 - 1/4 tsp ground nutmeg
 - 1 tsp vanilla extract
 - 1/2 cup raisins (optional)
 - 2 large eggs
 - 1 tbsp butter
 - Extra cinnamon for garnish

Directions
- In a large saucepan, combine rice, 3 cups milk, sugar, salt, cinnamon, and nutmeg. Simmer gently, stirring occasionally, for 25–30 minutes.
 - Whisk together the remaining cup of milk and eggs. Slowly stir into the rice mixture.
 - Cook an additional 5–7 minutes, stirring constantly, until thickened.
 - Remove from heat. Stir in butter, vanilla, and raisins (if using).
 - Let cool slightly and serve warm or chilled. Sprinkle with cinnamon to finish.
