Sweet & Sticky Pineapple Chicken Bites

🍍🍗 Sweet & Sticky Pineapple Chicken Bites

Better than takeout! Crispy chicken bites coated in a glossy, sweet pineapple sauce —
once you try this, ordering out won’t stand a chance.

Ingredients

  • 1½ lbs boneless chicken breast, cut into bite-size pieces
  • ½ cup cornstarch
  • 2 eggs, beaten
  • Salt & black pepper, to taste
  • Oil for frying
  • 1 cup pineapple chunks (fresh or canned, drained)

Sauce

  • ½ cup pineapple juice
  • ⅓ cup brown sugar
  • ¼ cup soy sauce
  • 2 tbsp ketchup
  • 1 tbsp honey
  • 1 tbsp cornstarch + 2 tbsp water (slurry)
  • ½ tsp garlic powder
  • Optional: pinch of chili flakes

Instructions

  1. Season chicken with salt and pepper.
  2. Dip chicken into beaten eggs, then coat with cornstarch.
  3. Heat oil to 350°F (175°C) and fry chicken until golden and crispy. Drain.
  4. In a saucepan, combine pineapple juice, brown sugar, soy sauce, ketchup, honey, and garlic powder.
  5. Bring to a gentle simmer, then stir in cornstarch slurry.
  6. Cook until sauce thickens and turns glossy.
  7. Add chicken and pineapple chunks; toss until fully coated.
  8. Serve hot over rice or enjoy as-is.
Tip: For extra crunch, double-fry the chicken for 30 seconds before saucing.
