Sweet & Sticky Pineapple Chicken Bites

🍍🍗 Sweet & Sticky Pineapple Chicken Bites
Better than takeout! Crispy chicken bites coated in a glossy, sweet pineapple sauce —
once you try this, ordering out won’t stand a chance.
Ingredients
- 1½ lbs boneless chicken breast, cut into bite-size pieces
- ½ cup cornstarch
- 2 eggs, beaten
- Salt & black pepper, to taste
- Oil for frying
- 1 cup pineapple chunks (fresh or canned, drained)
Sauce
- ½ cup pineapple juice
- ⅓ cup brown sugar
- ¼ cup soy sauce
- 2 tbsp ketchup
- 1 tbsp honey
- 1 tbsp cornstarch + 2 tbsp water (slurry)
- ½ tsp garlic powder
- Optional: pinch of chili flakes
Instructions
- Season chicken with salt and pepper.
- Dip chicken into beaten eggs, then coat with cornstarch.
- Heat oil to 350°F (175°C) and fry chicken until golden and crispy. Drain.
- In a saucepan, combine pineapple juice, brown sugar, soy sauce, ketchup, honey, and garlic powder.
- Bring to a gentle simmer, then stir in cornstarch slurry.
- Cook until sauce thickens and turns glossy.
- Add chicken and pineapple chunks; toss until fully coated.
- Serve hot over rice or enjoy as-is.
Tip: For extra crunch, double-fry the chicken for 30 seconds before saucing.
