Summer Salad Recipe

Ingredients:

  • 4 thinly sliced cucumbers
  • 1 large red onion, sliced
  • 1 large green bell pepper, sliced
  • 1 tablespoon salt
  • 2 cups white vinegar
  • 1 Ā½ cups sugar
  • 1 teaspoon celery flakes
  • 1 teaspoon red pepper flakes

Instructions:

  1. In a large bowl, combine the cucumbers, onions, peppers, and salt. Set the mixture aside.
  2. In a pot, bring the vinegar, sugar, celery flakes, and red pepper flakes to a boil. Once boiling, remove from heat and add two handfuls of ice, stirring until the ice melts.
  3. Transfer the prepared vegetables into large, wide-mouth canning jars (two quarts or one half-gallon jar). Pour the vinegar mixture over the vegetables, ensuring they are fully submerged.
  4. Seal the jars and store them in the refrigerator. The salad can be enjoyed for up to two months.

Yield:

2 quarts.
