These spinach garlic meatballs are juicy, flavorful, and stuffed with gooey mozzarella cheese.

🧾 Ingredients
- 1 lb ground beef (or a mix of beef and pork)
- 1 cup fresh spinach, finely chopped
- 3 cloves garlic, minced
- ¼ cup breadcrumbs
- ¼ cup grated Parmesan cheese
- 1 large egg
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 teaspoon Italian seasoning (optional)
- 4–6 oz mozzarella cheese, cut into small cubes
- 2 tablespoons olive oil (for cooking)

- In a large bowl, combine ground beef, spinach, garlic, breadcrumbs, Parmesan cheese, egg, salt, pepper, and Italian seasoning.
- Mix gently until just combined. Do not overmix.
- Take a small portion of the meat mixture, flatten it in your hand, place a cube of mozzarella in the center, and wrap the meat around it to form a ball.
- Repeat with remaining mixture.
- Heat olive oil in a skillet over medium heat.
- Cook meatballs, turning occasionally, until browned on all sides and cooked through (about 10–12 minutes).
- Serve hot and enjoy the melty mozzarella center.
