Ingredients:
- 1/2 cup olive oil
- 4 large potatoes, peeled and thinly sliced
- 1 large onion, thinly sliced
- 1 red bell pepper, seeded and thinly sliced (optional)
- 6 large eggs
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)

Instructions:
1. Cooking the Potatoes and Onions:
Heat the olive oil in a large non-stick frying pan over medium heat. Add the thinly sliced potatoes, onions, and the red bell pepper if using. Season with salt and pepper to enhance the flavor. Cook gently, stirring occasionally, for 15-20 minutes, until the potatoes are tender but not browned.
2. Preparing the Eggs:
While the potato mixture is cooking, beat the eggs in a large bowl. Add a pinch of salt and pepper to taste. Set aside until the potatoes are ready.
3. Combining and Cooking:
Once the potatoes and onions are tender, drain them from the oil using a colander, ensuring you reserve the oil for later. Gently fold the potatoes, onions, and bell pepper into the beaten eggs, mixing well. In the same pan, heat a few tablespoons of the reserved oil over medium heat. Pour the egg and potato mixture into the pan, ensuring it spreads evenly. Cook for approximately 5 minutes, or until the edges begin to set and the bottom turns golden brown.
4. Flipping the Tortilla:
Carefully place a large plate over the frying pan and invert the tortilla onto the plate. Add a little more oil to the pan if needed, then slide the tortilla back into the pan to cook the other side. Continue cooking for an additional 3-5 minutes, or until the second side is golden and the tortilla is fully set.
5. Serving:
Allow the tortilla to cool slightly before slicing it into wedges. Garnish with freshly chopped parsley and serve warm or at room temperature.
