Sour Cream Blueberry Coffee Cake

A delicious, moist family-favorite recipe loved for over 30 years!

Ingredients:

  • 1 cup sugar
  • 1/2 cup softened butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups blueberries (fresh or frozen)

Optional Cinnamon Sugar Layer:

  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon

Instructions:

  1. Preheat oven to 350°F (175°C) and grease a bundt pan.
  2. Cream together sugar and butter until fluffy.
  3. Add eggs, vanilla, and sour cream.
  4. Mix dry ingredients separately and add to batter.
  5. Fold in blueberries gently.
  6. Optional: Add half the batter, sprinkle cinnamon sugar, then add the rest.
  7. Bake for 50–60 minutes.
  8. Cool 15 minutes, remove from pan, and serve.
