🍗 Slow Cooker Sunday Chicken

This is one of those magical recipes that feels fancy but takes almost no effort.
🧾 Ingredients
- 1 whole chicken (4–5 lb)
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried thyme or rosemary
- 4 cloves garlic, smashed
- 1/2 cup chicken broth
- 2 tbsp butter, cut into pieces
- Optional: fresh herbs (rosemary or thyme)
👩🍳 Instructions
1️⃣ Season the Chicken
- Pat the chicken dry with paper towels.
- Mix salt, pepper, paprika, garlic powder, onion powder, and herbs.
- Rub seasoning all over the chicken, including under the skin if possible.
2️⃣ Prepare the Slow Cooker
- Add chicken broth and smashed garlic to the bottom of the slow cooker.
- Place butter pieces in the liquid.
- Set the chicken breast-side up in the slow cooker.
- Add fresh herbs if using.
3️⃣ Slow Cook
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
- The chicken is done when it’s fall-apart tender and reaches 165°F (74°C).
4️⃣ Optional Crisp Finish
- For crispy skin, transfer chicken to a baking sheet.
- Broil for 3–5 minutes until golden.
🍽️ Serving Ideas
- Mashed potatoes (don’t waste the sauce!)
- Rice or buttered noodles
- Roasted or steamed vegetables
