Slow Cooker Stuffed Pepper Casserole
This hearty slow cooker casserole has all the comforting flavors of classic stuffed peppers without the extra work. Ground beef, bell peppers, rice, and tomatoes cook together into a rich, satisfying family dinner.
Ingredients
- 1 lb ground beef
- 2 green bell peppers, diced
- 1 (28 oz) can diced tomatoes, undrained
- 1 cup uncooked long-grain rice
- 1 cup beef broth
- 1 small onion, diced (optional)
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 cup shredded cheddar cheese (optional)
Instructions
- Add the diced bell peppers and onion to the slow cooker.
- Place the ground beef on top and break it into large chunks.
- Pour in the diced tomatoes and beef broth.
- Stir in the uncooked rice, garlic powder, Italian seasoning, salt, and pepper.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, stirring once near the end if possible.
- Sprinkle shredded cheddar cheese over the top during the last 10 minutes of cooking, if desired.
- Serve hot with crusty bread or a green salad.
