This Pepperoncini Garlic Pot Roast is the ultimate dump-and-go comfort meal. A savory blend of beef broth, garlic, herbs, butter, and tangy pepperoncini slowly transforms a chuck roast into an incredibly juicy, fork-tender dinner that’s perfect for busy days.

Ingredients

  • 3–4 lbs beef chuck roast
  • 1 cup beef broth
  • 1/4 cup pepperoncini juice
  • 8–10 sliced pepperoncini peppers
  • 4 tbsp unsalted butter, cubed
  • 5 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • 1 tsp Italian seasoning
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1 tsp salt (or to taste)

Instructions

  1. Place the chuck roast into the slow cooker.
  2. Scatter the butter cubes, minced garlic, and pepperoncini peppers around the roast.
  3. In a measuring cup, whisk together the beef broth, pepperoncini juice, Worcestershire sauce, Italian seasoning, onion powder, garlic powder, salt, and black pepper.
  4. Pour the mixture evenly over the roast.
  5. Cover and cook on LOW for 8–9 hours or HIGH for 5–6 hours, until the beef is fall-apart tender.
  6. Shred the roast with two forks and stir it into the flavorful juices.
  7. Serve over mashed potatoes, buttered noodles, rice, or on toasted sandwich rolls.
