Slow Cooker Pepperoncini Garlic Pot Roast
This Pepperoncini Garlic Pot Roast is the ultimate dump-and-go comfort meal. A savory blend of beef broth, garlic, herbs, butter, and tangy pepperoncini slowly transforms a chuck roast into an incredibly juicy, fork-tender dinner that’s perfect for busy days.
Ingredients
- 3–4 lbs beef chuck roast
- 1 cup beef broth
- 1/4 cup pepperoncini juice
- 8–10 sliced pepperoncini peppers
- 4 tbsp unsalted butter, cubed
- 5 cloves garlic, minced
- 1 tbsp Worcestershire sauce
- 1 tsp Italian seasoning
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/2 tsp black pepper
- 1 tsp salt (or to taste)
Instructions
- Place the chuck roast into the slow cooker.
- Scatter the butter cubes, minced garlic, and pepperoncini peppers around the roast.
- In a measuring cup, whisk together the beef broth, pepperoncini juice, Worcestershire sauce, Italian seasoning, onion powder, garlic powder, salt, and black pepper.
- Pour the mixture evenly over the roast.
- Cover and cook on LOW for 8–9 hours or HIGH for 5–6 hours, until the beef is fall-apart tender.
- Shred the roast with two forks and stir it into the flavorful juices.
- Serve over mashed potatoes, buttered noodles, rice, or on toasted sandwich rolls.
