This easy Slow Cooker Onion Beef Stew is a hearty comfort meal made with tender beef, rich onion flavor, and savory gravy. With just a handful of ingredients, it’s the perfect dump-and-go dinner for busy weeknights.
Ingredients
- 2 lbs beef stew meat, cut into bite-sized cubes
- 1 packet (1 oz) dry onion soup mix
- 2 cups low-sodium beef broth
- 8 oz mushrooms, sliced
- 2 tbsp cornstarch (optional, for thickening)
- 2 tbsp cold water (optional)
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Place the beef stew meat into the slow cooker.
- Sprinkle the dry onion soup mix evenly over the beef.
- Add the sliced mushrooms.
- Pour the beef broth over everything.
- Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until the beef is fork-tender.
- If you prefer a thicker gravy, whisk together the cornstarch and cold water, stir it into the slow cooker during the last 20–30 minutes of cooking, and cook until thickened.
- Garnish with fresh parsley if desired and serve over mashed potatoes, egg noodles, or steamed rice.
