This easy Slow Cooker Onion Beef Stew is a hearty comfort meal made with tender beef, rich onion flavor, and savory gravy. With just a handful of ingredients, it’s the perfect dump-and-go dinner for busy weeknights.

Ingredients

  • 2 lbs beef stew meat, cut into bite-sized cubes
  • 1 packet (1 oz) dry onion soup mix
  • 2 cups low-sodium beef broth
  • 8 oz mushrooms, sliced
  • 2 tbsp cornstarch (optional, for thickening)
  • 2 tbsp cold water (optional)
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Place the beef stew meat into the slow cooker.
  2. Sprinkle the dry onion soup mix evenly over the beef.
  3. Add the sliced mushrooms.
  4. Pour the beef broth over everything.
  5. Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until the beef is fork-tender.
  6. If you prefer a thicker gravy, whisk together the cornstarch and cold water, stir it into the slow cooker during the last 20–30 minutes of cooking, and cook until thickened.
  7. Garnish with fresh parsley if desired and serve over mashed potatoes, egg noodles, or steamed rice.
