Slow Cooker Hamburger Potato Casserole
This hearty Slow Cooker Hamburger Potato Casserole is an easy, family-friendly comfort meal. Layers of seasoned ground beef, tender sliced potatoes, creamy mushroom sauce, and melted cheddar cheese slowly cook together into a rich and satisfying dinner with very little effort.
Ingredients
- 2 lbs lean ground beef
- 4 medium Yukon Gold potatoes, thinly sliced
- 1 medium onion, thinly sliced
- 1 (10.5 oz) can condensed cream of mushroom soup
- 1 cup beef broth
- 2 cups shredded cheddar cheese
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- Salt and black pepper, to taste
- Fresh parsley, chopped (optional)
Instructions
- Lightly grease the inside of the slow cooker.
- Spread the ground beef evenly across the bottom and season with garlic powder, onion powder, paprika, salt, and pepper.
- Arrange the sliced potatoes over the beef in overlapping layers.
- Top with the sliced onion.
- Whisk together the cream of mushroom soup and beef broth until smooth, then pour evenly over the potatoes.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the potatoes are tender.
- Sprinkle the shredded cheddar cheese over the top during the last 20 minutes of cooking and cover until melted.
- Garnish with fresh parsley and serve hot.
