Slow Cooker Enchilada Chicken

This slow cooker enchilada chicken is a simple and comforting meal made with just a few ingredients.
Tender chicken breasts cook slowly in rich red enchilada sauce, creating a flavorful dish that can be used for tacos, burritos, rice bowls, or nachos.


Ingredients

  • 3–4 boneless chicken breasts
  • 1 cup red enchilada sauce
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1 small diced onion
  • Salt and pepper to taste

Preparation Time

  • Prep Time: 5 minutes
  • Cook Time: 4–6 hours (slow cooker)
  • Total Time: 4 hours 5 minutes
  • Servings: 4

Instructions

1. Add Chicken

Place the raw chicken breasts in the bottom of the slow cooker and season lightly with salt and pepper.

2. Pour Sauce

Pour the red enchilada sauce evenly over the chicken.

3. Add Ingredients

Sprinkle the diced onion and shredded cheese over the top.

4. Slow Cook

Cover and cook on low for 4–6 hours until the chicken becomes very tender.

5. Shred and Serve

Shred the chicken with two forks and mix it with the sauce before serving.
