This Slow Cooker Creamy Beef & Mushroom Casserole is an easy, budget-friendly comfort meal made with ground beef in a rich, savory mushroom sauce. With just a few pantry staples, you’ll have a hearty dinner that’s perfect served over mashed potatoes, rice, or egg noodles.

Ingredients

  • 2 lbs lean ground beef
  • 2 (10.5 oz) cans condensed cream of mushroom soup
  • 1 packet (1 oz) dry onion soup mix
  • 1 cup beef broth
  • 8 oz sliced mushrooms (optional)
  • 1 tsp garlic powder
  • ½ tsp black pepper
  • 1 tbsp Worcestershire sauce
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Place the ground beef into the slow cooker, breaking it into large chunks.
  2. Sprinkle the onion soup mix evenly over the beef.
  3. Add the sliced mushrooms, if using.
  4. In a bowl, whisk together the cream of mushroom soup, beef broth, garlic powder, black pepper, and Worcestershire sauce.
  5. Pour the mixture over the beef.
  6. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  7. About 30 minutes before serving, break the beef into smaller crumbles and stir everything together until creamy.
  8. Garnish with chopped parsley and serve over mashed potatoes, rice, buttered noodles, or toast.
