Slow Cooker Cheddar Beef Roast | Patriotic Comfort Dinner
Slow Cooker Cheddar Beef Chuck Roast
Tender beef roast slowly cooked in a rich, creamy cheddar sauce
About This Recipe
This slow cooker cheddar beef roast is the kind of comforting dinner that requires very little preparation. A hearty chuck roast slowly cooks until fork-tender while canned cheddar cheese soup creates a rich, creamy sauce around the meat.
The recipe is especially convenient when you’re feeding a crowd because the slow cooker handles almost everything. Serve the tender beef with mashed potatoes, roasted vegetables, rice, or warm dinner rolls to soak up the creamy sauce.
Ingredients
Main Ingredients
- 3–4 lb (1.4–1.8 kg) beef chuck roast
- 1 can (10.5 oz / 298g) condensed cheddar cheese soup
- 1 medium yellow onion, diced
Seasoning & Liquid
- 1 packet dry onion soup mix
- ½ cup (120ml) beef broth
- ½ tsp black pepper
- Salt, to taste
Instructions
- Prepare the slow cooker.
Lightly coat the inside of a 6-quart slow cooker with nonstick cooking spray. - Season the roast.
Pat the chuck roast dry with paper towels and season lightly with black pepper and salt. Keep in mind that the soup and onion soup mix already contain salt. - Add the onion.
Scatter the diced onion across the bottom of the slow cooker. - Add the beef.
Place the seasoned chuck roast directly over the onions. - Make the creamy topping.
In a bowl, combine the condensed cheddar cheese soup, dry onion soup mix, and beef broth. Stir until evenly combined. - Pour over the roast.
Spoon the cheddar mixture evenly over the beef, allowing some of the sauce to run down around the sides. - Slow cook.
Cover and cook on LOW for approximately 7–8 hours, or until the roast is very tender and can be easily pulled apart with a fork. - Check the beef.
The roast should be fully cooked and tender. For food safety, beef roast should reach at least 145°F (63°C), followed by a rest period; for this recipe, the longer slow-cooking time is intended to make the chuck roast fork-tender. - Rest the roast.
Turn off the slow cooker and allow the beef to rest in the sauce for about 10 minutes. - Shred and serve.
Use two forks to gently pull the beef into large tender pieces. Spoon the creamy cheddar sauce over the meat and serve hot.
Tips for Success
- Choose chuck roast.
Its marbling and connective tissue make it especially well suited for long, slow cooking. - Don’t add too much salt.
Condensed soup and onion soup mix can already be quite salty. - Keep the lid closed.
Avoid repeatedly opening the slow cooker because it releases heat and can extend the cooking time. - Cook until truly tender.
If the roast is still difficult to pull apart, continue cooking until the connective tissue has softened. - Thin the sauce if needed.
If the sauce becomes thicker than you prefer, stir in a small amount of warm beef broth before serving. - Save the leftovers.
The beef and creamy sauce make excellent leftovers and can be reheated gently the next day.
Serving Suggestions
Serve this tender cheddar beef roast over creamy mashed potatoes, buttered egg noodles, white rice, or roasted potatoes. Add green beans, corn, carrots, or a crisp green salad for a complete family dinner.
