🍲 Slow-Cooked Beef & Onion Soup

Ingredients:

  • 2 lbs (900g) beef chuck roast, cut into chunks
  • 3 large onions, thinly sliced
  • 4 cups beef broth
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp thyme
  • 1 bay leaf
  • Salt & pepper to taste
  • French bread slices
  • Shredded Gruyère or mozzarella cheese
  • Fresh parsley for garnish

Instructions:

  1. Heat butter and olive oil in a pot. Add onions and caramelize for 15–20 minutes.
  2. Add garlic and cook for 1 minute.
  3. Add beef chunks and brown well.
  4. Pour in beef broth, add thyme, bay leaf, salt, and pepper.
  5. Cover and simmer for 2–3 hours until beef is tender.
  6. Remove bay leaf and lightly shred the beef.
  7. Serve hot with melted cheese and bread on top.
  8. Garnish with fresh parsley. Enjoy!
