Slow-Cooked Beef & Onion Soup

🍲 Slow-Cooked Beef & Onion Soup
Ingredients:
- 2 lbs (900g) beef chuck roast, cut into chunks
- 3 large onions, thinly sliced
- 4 cups beef broth
- 2 tbsp butter
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1 tsp thyme
- 1 bay leaf
- Salt & pepper to taste
- French bread slices
- Shredded Gruyère or mozzarella cheese
- Fresh parsley for garnish
Instructions:
- Heat butter and olive oil in a pot. Add onions and caramelize for 15–20 minutes.
- Add garlic and cook for 1 minute.
- Add beef chunks and brown well.
- Pour in beef broth, add thyme, bay leaf, salt, and pepper.
- Cover and simmer for 2–3 hours until beef is tender.
- Remove bay leaf and lightly shred the beef.
- Serve hot with melted cheese and bread on top.
- Garnish with fresh parsley. Enjoy!
