Sachertorte

Sachertorte is a classic Austrian chocolate cake known for its elegant simplicity and rich flavor.
This refined dessert features a dense chocolate sponge layered with apricot jam and finished with a smooth, glossy chocolate glaze.
Traditionally served with whipped cream, it’s a timeless favorite for special occasions.

Ingredients

For the Cake

  • 1 cup dark chocolate, chopped
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 4 large eggs, separated
  • 1 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • 1/4 teaspoon salt

For the Filling

  • 1/2 cup apricot jam

For the Chocolate Glaze

  • 1/2 cup heavy cream
  • 1 cup dark chocolate, chopped

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a 9-inch round cake pan.
  2. Melt chocolate gently and let cool slightly.
  3. Cream butter and half the sugar until light and fluffy.
  4. Add egg yolks one at a time, then vanilla and melted chocolate.
  5. In a separate bowl, beat egg whites with remaining sugar until stiff peaks form.
  6. Fold egg whites gently into chocolate mixture.
  7. Sift in flour and salt, folding carefully to combine.
  8. Pour batter into prepared pan and bake 35–40 minutes.
  9. Cool completely, then slice cake horizontally.
  10. Spread warmed apricot jam evenly between layers and over the top.
  11. For glaze, heat cream until steaming, pour over chocolate, and stir until smooth.
  12. Pour glaze over cake, allowing it to drip evenly down the sides.
  13. Let set before slicing.
