🌿 Root Vegetable Gratin with Sweet Potatoes, Parsnips & Beets
Ingredients:
- 2 medium sweet potatoes, peeled and thinly sliced
- 2 medium parsnips, peeled and thinly sliced
- 2 medium beets, peeled and thinly sliced
- 1 tablespoon olive oil
- 1 tablespoon fresh thyme leaves
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 2 tablespoons butter
Instructions:
- Preheat your oven to 375°F (190°C).
- Lightly grease a baking dish with butter or olive oil.
- In a bowl, toss the sweet potatoes, parsnips, and beets with olive oil, thyme, salt, and pepper.
- Arrange the sliced vegetables in rows in the baking dish.
- Dot the top with small pieces of butter.
- Bake for 45–55 minutes, or until vegetables are tender and lightly browned.
- Let cool slightly before serving. Enjoy!
