Ribeye Steak Bites & Cheesy Smashed Potatoes

Juicy, buttery ribeye steak bites paired with ultra-creamy smashed potatoes loaded
with melted cheese. This comfort-packed dinner feels like a steakhouse meal made
right at home.

Ingredients

Ribeye Steak Bites

  • 1 lb ribeye steak, cut into bite-sized cubes
  • Salt and black pepper, to taste
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 tsp fresh rosemary or thyme, chopped (optional)
  • 1 tbsp soy sauce (optional, for extra flavor)

Cheesy Smashed Potatoes

  • 2 lbs baby potatoes or Yukon Gold potatoes
  • ½ cup milk
  • 4 tbsp butter
  • 1 cup shredded cheddar cheese
  • Salt and pepper, to taste
  • ¼ cup sour cream (optional)
  • ¼ cup chopped green onions or chives (optional)

Instructions

  1. Cook the potatoes:
    Boil potatoes in salted water until fork-tender (about 15–20 minutes). Drain well.
  2. Smash & cheese:
    Mash potatoes with butter, milk, salt, and pepper. Stir in cheddar cheese and sour cream
    until creamy. Keep warm.
  3. Season the steak:
    Pat steak bites dry and season generously with salt and black pepper.
  4. Sear:
    Heat olive oil in a skillet over medium-high heat. Add steak bites in a single layer and
    sear 2–3 minutes per side until browned.
  5. Butter & garlic:
    Reduce heat to medium. Add butter, garlic, herbs, and soy sauce (if using). Toss steak
    bites for 30–60 seconds until coated and fragrant.
  6. Serve:
    Plate steak bites alongside cheesy smashed potatoes. Garnish with herbs or green onions.
Tip: Let the steak rest for a minute before serving to keep it extra juicy.
Add a side salad or roasted veggies for a complete meal.
