🥩 Ribeye Steak Bites & Cheesy Smashed Potatoes 🧀
Juicy, buttery ribeye steak bites paired with ultra-creamy smashed potatoes loaded
with melted cheese. This comfort-packed dinner feels like a steakhouse meal made
right at home.
Ingredients
Ribeye Steak Bites
- 1 lb ribeye steak, cut into bite-sized cubes
- Salt and black pepper, to taste
- 1 tbsp olive oil
- 2 tbsp butter
- 3 cloves garlic, minced
- 1 tsp fresh rosemary or thyme, chopped (optional)
- 1 tbsp soy sauce (optional, for extra flavor)
Cheesy Smashed Potatoes
- 2 lbs baby potatoes or Yukon Gold potatoes
- ½ cup milk
- 4 tbsp butter
- 1 cup shredded cheddar cheese
- Salt and pepper, to taste
- ¼ cup sour cream (optional)
- ¼ cup chopped green onions or chives (optional)
Instructions

Cook the potatoes:
Boil potatoes in salted water until fork-tender (about 15–20 minutes). Drain well. -
Smash & cheese:
Mash potatoes with butter, milk, salt, and pepper. Stir in cheddar cheese and sour cream
until creamy. Keep warm. -
Season the steak:
Pat steak bites dry and season generously with salt and black pepper. -
Sear:
Heat olive oil in a skillet over medium-high heat. Add steak bites in a single layer and
sear 2–3 minutes per side until browned. -
Butter & garlic:
Reduce heat to medium. Add butter, garlic, herbs, and soy sauce (if using). Toss steak
bites for 30–60 seconds until coated and fragrant. -
Serve:
Plate steak bites alongside cheesy smashed potatoes. Garnish with herbs or green onions.
Tip: Let the steak rest for a minute before serving to keep it extra juicy.
