Ingredients:

  • 4-5 medium potatoes
  • 65 grams of breadcrumbs
  • Fresh parsley, chopped
  • 100 grams of grated cheese
  • 2 eggs
  • Salt and pepper, to taste
  • Olive oil, for frying

For the Sauce:

  • 2 ⅔ teaspoons mayonnaise
  • 1 garlic clove, minced
  • ¼ teaspoon soy sauce

Instructions:

Prepare the Potatoes

Ensure your mashed potatoes are cold or at room temperature, as warm potatoes can affect the texture. Line a baking sheet with parchment paper, and prepare a wire cooling rack over a layer of paper towels for draining the pancakes after frying, which helps maintain their crispiness.

Mix the Ingredients

In a large mixing bowl, combine the mashed potatoes, breadcrumbs, parsley, grated cheese, eggs, salt, and pepper. Mix everything thoroughly using a wooden spoon or spatula. If the mixture feels too dry, you can add an extra beaten egg. If it feels too moist, incorporate more breadcrumbs or a small amount of flour to adjust the texture.

Shape the Pancakes

Using a ½ cup measuring cup or a cookie scoop, take portions of the potato mixture and form patties about ½ inch thick. Place the patties on the prepared baking sheet and repeat the process until all the mixture is used.

Cooking the Pancakes
