Potato, Egg & Ham Casserole
A comforting baked casserole made with tender potatoes, fluffy eggs, melty cheese, savory ham, and onions — perfect for holidays or family breakfasts.
Ingredients
- 4 cups potatoes, peeled and diced
- 8 large eggs
- 1½ cups shredded cheese (cheddar or mozzarella)
- 1½ cups cooked ham, diced
- 1 small onion, chopped
- ½ cup milk or cream
- Salt and black pepper, to taste
- 2 tbsp olive oil or butter
- Optional: green onions for garnish
Instructions
- Preheat oven to 375°F (190°C). Grease a baking dish.
- Boil potatoes until just tender. Drain and spread evenly in the dish.
- Scatter diced ham and onions over the potatoes.
- Whisk eggs with milk, salt, and pepper until well combined.
- Pour egg mixture evenly over the casserole.
- Top with shredded cheese.
- Bake for 40–45 minutes until set and golden on top.
- Let rest 10 minutes before slicing. Garnish if desired.
