Potato, Egg & Ham Casserole

A comforting baked casserole made with tender potatoes, fluffy eggs, melty cheese, savory ham, and onions — perfect for holidays or family breakfasts.

Ingredients

  • 4 cups potatoes, peeled and diced
  • 8 large eggs
  • 1½ cups shredded cheese (cheddar or mozzarella)
  • 1½ cups cooked ham, diced
  • 1 small onion, chopped
  • ½ cup milk or cream
  • Salt and black pepper, to taste
  • 2 tbsp olive oil or butter
  • Optional: green onions for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish.
  2. Boil potatoes until just tender. Drain and spread evenly in the dish.
  3. Scatter diced ham and onions over the potatoes.
  4. Whisk eggs with milk, salt, and pepper until well combined.
  5. Pour egg mixture evenly over the casserole.
  6. Top with shredded cheese.
  7. Bake for 40–45 minutes until set and golden on top.
  8. Let rest 10 minutes before slicing. Garnish if desired.
Prep Time: 15 minutes
Bake Time: 45 minutes
Servings: 6–8

Tips:

  • Can be prepared the night before and baked in the morning.
  • Swap ham with bacon or sausage if desired.
