Pineapple Quick Bread Recipe

Ingredients:

  • 2 cups all-purpose flour
  • 1 can (20 oz) crushed pineapple (drained, reserving 2 tablespoons of juice for glaze)
  • 1/2 cup sour cream
  • 1 cup granulated sugar
  • 3 oz cream cheese (softened)
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3 teaspoons vanilla extract
  • 1 large egg (beaten)

For the Glaze:

  • 1⅓ cups powdered sugar
  • 2 tablespoons reserved pineapple juice

Preparation:

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and set aside.
  2. In a large bowl, cream together the softened cream cheese and granulated sugar until smooth.
  3. Beat in the egg and vanilla extract until well combined.
  4. Mix in the sour cream, ensuring the mixture is smooth.
  5. In a separate bowl, sift together the flour, baking soda, and salt. Gradually incorporate these dry ingredients into the wet mixture, mixing until just combined.
  6. Gently fold in the crushed pineapple, setting aside 2 tablespoons for the glaze.
  7. Pour the batter into the prepared loaf pan, leveling the top with a spatula.
  8. Bake for approximately 60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

For the Glaze:

  1. In a small bowl, mix the powdered sugar with the reserved pineapple juice until smooth.
  2. Drizzle the glaze generously over the cooled bread.
  3. Let the glaze set before slicing.
