Pineapple Quick Bread Recipe
Ingredients:
- 2 cups all-purpose flour
- 1 can (20 oz) crushed pineapple (drained, reserving 2 tablespoons of juice for glaze)
- 1/2 cup sour cream
- 1 cup granulated sugar
- 3 oz cream cheese (softened)
- 1 teaspoon baking soda
- 1 teaspoon salt
- 3 teaspoons vanilla extract
- 1 large egg (beaten)
For the Glaze:
- 1ā cups powdered sugar
- 2 tablespoons reserved pineapple juice
Preparation:
- Preheat your oven to 350Ā°F (175Ā°C). Grease a 9Ć5-inch loaf pan and set aside.
- In a large bowl, cream together the softened cream cheese and granulated sugar until smooth.
- Beat in the egg and vanilla extract until well combined.
- Mix in the sour cream, ensuring the mixture is smooth.
- In a separate bowl, sift together the flour, baking soda, and salt. Gradually incorporate these dry ingredients into the wet mixture, mixing until just combined.
- Gently fold in the crushed pineapple, setting aside 2 tablespoons for the glaze.
- Pour the batter into the prepared loaf pan, leveling the top with a spatula.
- Bake for approximately 60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
For the Glaze:
- In a small bowl, mix the powdered sugar with the reserved pineapple juice until smooth.
- Drizzle the glaze generously over the cooled bread.
- Let the glaze set before slicing.
