“My husband invited a couple of neighbors over, so I baked these.
They disappeared before dinner! Everyone kept asking for the recipe.”

Ingredients

  • 1 cup all-purpose flour
  • 1 cup brown sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup melted butter
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans
  • Extra pecan halves for topping

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin pan with paper liners.
  2. In a bowl, whisk together flour, brown sugar, baking powder, and salt.
  3. Add eggs, melted butter, and vanilla. Mix until just combined.
  4. Fold in chopped pecans.
  5. Spoon batter evenly into muffin cups.
  6. Top each muffin with a pecan half.
  7. Bake for 20–25 minutes, until golden and set.
  8. Cool slightly before serving.
