Ingredients
For the Cobbler:
- 1 ½ cups 1.1 GF flour or all-purpose flour
- 1 tbsp baking powder
- ½ tsp ground cinnamon
- ¼ tsp salt
- 1 cup milk
- 1 tsp vanilla extract
- ½ cup unsalted butter, melted
For the Pecan Pie Filling:
- 1 ½ cups brown sugar
- 3 large eggs
- 1 cup light corn syrup
- 2 tsp vanilla extract
- 2 cups chopped pecans (plus extra for topping)
- 1 cup hot water (for caramel sauce effect)
Instructions
- Preheat oven: Set to 350°F (175°C). Grease a 9×13-inch baking dish with butter or nonstick spray.
- Prepare the batter: In a bowl, whisk together flour, baking powder, cinnamon, and salt. Add milk, vanilla, and melted butter. Stir until smooth. Pour into the baking dish.
- Make the filling: In another bowl, whisk together brown sugar, eggs, corn syrup, and vanilla. Stir in chopped pecans.
- Assemble: Pour the pecan mixture gently over the batter — do not stir. Carefully pour the hot water on top (this creates the gooey caramel layer during baking).
- Bake: Bake uncovered for 45–50 minutes until golden and bubbly. The top should be slightly crisp and the center soft.
- Serve: Let cool for 10–15 minutes. Serve warm with a scoop of vanilla ice cream or whipped cream on top.
