Pecan Pie Cobbler 🍯🥧

🍰 Ingredients
- 1 cup self-rising flour
- 1 cup sugar
- 1 cup milk
- 1 tsp vanilla extract
- 1 cup brown sugar
- 1 ½ cups chopped pecans (plus extra for topping)
- 1 ½ cups boiling water
- ½ cup (1 stick) unsalted butter, melted
- Pinch of salt
👩🍳 Instructions
- Preheat oven to 350°F (175°C).
- Pour melted butter into the bottom of a 9×13-inch baking dish.
- In a medium bowl, whisk together flour, sugar, milk, vanilla, and salt until smooth. Pour over the butter (do not stir).
- Sprinkle brown sugar evenly over the top, followed by chopped pecans.
- Slowly pour boiling water over the entire dish (again, do not stir).
- Bake uncovered for 35–40 minutes, until the top is golden and bubbling.
- Cool for at least 10 minutes before serving — the caramel sauce thickens as it rests.
- Serve warm with ice cream or whipped cream. 😋
🥄 Tip: This dessert makes its own gooey caramel sauce as it bakes — no need to mix or layer separately!
