Oven-Baked Garlic Butter Pork Chops

Juicy, tender, and packed with rich garlic butter flavor, these Oven-Baked Pork Chops are an easy family dinner that’s ready with minimal effort. Baked over sliced potatoes, this comforting one-pan meal is sure to become a favorite.

Ingredients

  • 6 bone-in pork chops (about 1-inch thick)
  • 4 medium Yukon Gold potatoes, thinly sliced
  • 4 tbsp unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • Salt and black pepper, to taste
  • 2 tbsp olive oil
  • 2 tbsp chopped fresh parsley (optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Arrange the sliced potatoes in an even layer in the baking dish. Drizzle with olive oil and season with a little salt and pepper.
  3. In a small bowl, combine the melted butter, garlic, onion powder, paprika, and Italian seasoning.
  4. Season both sides of the pork chops with salt and black pepper.
  5. Place the pork chops over the potatoes and brush generously with the garlic butter mixture.
  6. Cover the baking dish tightly with foil and bake for 35 minutes.
  7. Remove the foil and continue baking for 15–20 minutes, or until the pork reaches an internal temperature of 145°F (63°C) and the potatoes are tender.
  8. For extra browning, broil for 2–3 minutes before removing from the oven.
  9. Sprinkle with fresh parsley and serve immediately.
