Hearty, cheesy, and full of classic cheeseburger flavor — this one-pot macaroni soup is the perfect comfort meal! No Velveeta needed — just real cheese, beef, and rich tomato broth for a homemade favorite your whole family will love.

🧾 Ingredients

  • 1 lb ground beef (80% lean)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 (14 oz) can diced tomatoes
  • 4 cups beef broth
  • 1 cup milk or heavy cream
  • 2 cups elbow macaroni, uncooked
  • 2 cups shredded cheddar cheese
  • 2 tbsp tomato paste
  • 1 tsp Worcestershire sauce
  • 1 tsp mustard (optional)
  • 1 tsp paprika
  • Salt and pepper, to taste

  1. Cook beef: In a large pot, cook ground beef over medium heat until browned. Drain excess grease.
  2. Add aromatics: Stir in onion and garlic; cook for 2–3 minutes until fragrant.
  3. Build the base: Add diced tomatoes, tomato paste, Worcestershire sauce, mustard, paprika, salt, and pepper. Stir to combine.
  4. Add broth and pasta: Pour in beef broth and bring to a boil. Add macaroni and cook until pasta is tender (about 10–12 minutes).
  5. Make it creamy: Reduce heat to low. Stir in milk or cream and shredded cheese until melted and smooth.
  6. Serve: Ladle into bowls and top with extra cheese or a sprinkle of parsley if desired.
