One-Pan Herb-Roasted Chicken with Potatoes & Green Beans

Servings: 4

Ingredients:

  • 4 boneless chicken breasts
  • 500g baby potatoes, halved
  • 250g green beans, trimmed
  • 3 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • Salt & black pepper
  • Juice of 1 lemon

Instructions:

  1. Preheat oven to 200°C (400°F).
  2. Toss potatoes with oil, thyme, salt, and pepper. Spread in a baking dish.
  3. Mix remaining oil with garlic, paprika, thyme, parsley, and lemon juice.
  4. Rub chicken with the mixture and place it between the potatoes.
  5. Bake for 25 minutes.
  6. Add seasoned green beans and bake 15–20 minutes more.
  7. Rest 5 minutes before slicing and serve with pan juices.

Tips:

  • Swap green beans for broccoli or asparagus.
  • Use chicken thighs for richer flavor.
  • Add chili flakes for heat or honey for sweetness.
