Ingredients 📝

  • 5 chicken drumsticks
  • 500g (1.1 lb) baby potatoes, halved or quartered
  • 3 large carrots, peeled & chopped
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1 tsp paprika
  • Salt & pepper to taste
  • 1 tbsp chopped fresh parsley (for garnish)

Instructions 👨‍🍳

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss potatoes and carrots with 2 tbsp olive oil, half the garlic powder, oregano, thyme, paprika, salt, and pepper.
  3. Place vegetables in a single layer on a baking tray.
  4. Rub chicken drumsticks with remaining olive oil and season with the rest of the spices.
  5. Nestle the chicken among the vegetables on the tray.
  6. Roast for 40–45 minutes, flipping vegetables once halfway, until chicken is golden and cooked through (internal temp: 165°F / 74°C).
  7. Sprinkle with fresh parsley before serving.

Tips & Variations:

  • Add red onion wedges or bell peppers for extra flavor.
  • Use sweet potatoes instead of carrots for a twist.
