One-Bowl Homemade Cinnamon Apple Cake

Homemade Cinnamon Apple Cake (One Bowl)
Ingredients
- 1⅓ cups (265 g) granulated sugar
- ½ cup (120 ml) neutral oil (or melted butter)
- 2 large eggs
- 1 tsp vanilla extract
- 1¾ cups (220 g) all-purpose flour
- 1½ tsp ground cinnamon
- 1 tsp baking soda
- ½ tsp fine salt
- ¼ tsp ground nutmeg (optional)
- 3 cups peeled, diced apples (about 3 medium; any baking variety)
- ½ cup chopped walnuts or pecans (optional)
- 2 tbsp milk or apple juice (if batter seems very thick)
Instructions
- Heat oven to 350°F / 175°C. Grease and line an 8- or 9-inch square pan (or a 9-inch round).
- In a large bowl whisk sugar, oil, eggs, and vanilla until smooth.
- Add flour, cinnamon, baking soda, salt, and nutmeg right on top; mix just until combined (batter will be thick).
- Fold in the diced apples and nuts. If the batter is too stiff to spread, stir in up to 2 tbsp milk/apple juice.
- Spread into the pan. Bake 40–50 minutes (8″ pan ~50 min, 9″ ~42 min) until a tester comes out with moist crumbs.
- Cool 15 minutes, then serve warm or at room temp. Dust with powdered sugar or drizzle with a simple glaze if desired.
Tip: Mix 2 tbsp brown sugar with ½ tsp cinnamon and sprinkle over the batter before baking for a crackly top.
