Old-Fashioned Coconut Cream Dessert

Ingredients
- 1 prepared graham cracker or biscuit crust
- 2 cups whole milk
- 1 cup coconut milk
- ¾ cup sugar
- 3 egg yolks
- ¼ cup cornstarch
- 2 tablespoons butter
- 1 teaspoon vanilla extract
- 1 cup shredded coconut (sweetened)
- 1½ cups whipped cream
- ½ cup toasted coconut (for topping)
Instructions
- In a saucepan, whisk milk, coconut milk, sugar, egg yolks, and cornstarch.
- Cook over medium heat, stirring constantly, until thick and creamy.
- Remove from heat and stir in butter and vanilla.
- Fold in shredded coconut.
- Pour the filling into the prepared crust.
- Cover and refrigerate for at least 4 hours, until fully set.
- Top with whipped cream and sprinkle toasted coconut on top.
