No-Bake Pecan Pie Balls 🍫🥧
No oven, no stress — just pure pecan pie flavor in every bite!
🍯 You’ll Need
- 1 ½ cups pecans (toasted for best flavor)
- ¾ cup crushed cookies or graham cracker crumbs
- 3 tbsp maple syrup (or corn syrup)
- 1 tsp vanilla extract
- Pinch of salt
- 1 cup melting chocolate (dark or milk, for coating)
- Whole pecans (for topping, optional)
- ✨ Secret mix: 1 tbsp cream cheese or condensed milk to keep the center soft!
🧑🍳 Directions
- In a food processor, pulse the pecans until finely chopped (not ground). Add crushed cookies, maple syrup, vanilla, salt, and the secret softener (cream cheese or condensed milk).
- Pulse until the mixture sticks together when pressed. Chill in the fridge for 15–20 minutes.
- Form into 1-inch balls and place on a parchment-lined tray. Freeze for 10 minutes to firm up.
- Melt the chocolate coating in a microwave or double boiler until smooth.
- Dip each ball into the melted chocolate, letting the excess drip off. Top with a pecan half before the chocolate sets.
- Place back on the tray and refrigerate until the coating is firm (about 15 minutes).
- Store in an airtight container in the fridge for up to 1 week — or freeze for longer!
🍬 Tip: Add a tiny pinch of cinnamon or nutmeg to the filling for that extra pecan pie warmth!
