No oven, no stress — just pure pecan pie flavor in every bite!

No-Bake Pecan Pie Balls

🍯 You’ll Need

  • 1 ½ cups pecans (toasted for best flavor)
  • ¾ cup crushed cookies or graham cracker crumbs
  • 3 tbsp maple syrup (or corn syrup)
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1 cup melting chocolate (dark or milk, for coating)
  • Whole pecans (for topping, optional)
  • Secret mix: 1 tbsp cream cheese or condensed milk to keep the center soft!

🧑‍🍳 Directions

  1. In a food processor, pulse the pecans until finely chopped (not ground). Add crushed cookies, maple syrup, vanilla, salt, and the secret softener (cream cheese or condensed milk).
  2. Pulse until the mixture sticks together when pressed. Chill in the fridge for 15–20 minutes.
  3. Form into 1-inch balls and place on a parchment-lined tray. Freeze for 10 minutes to firm up.
  4. Melt the chocolate coating in a microwave or double boiler until smooth.
  5. Dip each ball into the melted chocolate, letting the excess drip off. Top with a pecan half before the chocolate sets.
  6. Place back on the tray and refrigerate until the coating is firm (about 15 minutes).
  7. Store in an airtight container in the fridge for up to 1 week — or freeze for longer!
🍬 Tip: Add a tiny pinch of cinnamon or nutmeg to the filling for that extra pecan pie warmth!
