Mom’s Famous Cream Puffs Recipe

Ingredients:

  • 8 tablespoons (1 stick) of butter
  • 1 cup of water
  • 1 teaspoon of vanilla extract
  • 4 large eggs
  • 1 cup of all-purpose flour

For Mom’s Famous Filling:

  • 1 pint of heavy cream
  • 1 package (3.4 ounces) of instant vanilla pudding mix
  • ⅓ cup of milk

Yields: Approx. 16 cream puffs

Instructions:

  1. In a medium-sized saucepan, bring the butter, water, and vanilla extract to a boil over medium heat.
  2. Gradually add the flour, stirring continuously until the mixture pulls away from the sides of the pan and forms a smooth dough ball.
  3. Remove from heat and allow the dough to cool slightly.
  4. Add the eggs one at a time, beating well after each addition until the dough becomes smooth and glossy.
  5. Using a spoon or piping bag, place small mounds of dough onto a baking sheet lined with parchment paper.
  6. Preheat the oven to 400°F (200°C) and bake for 25-30 minutes, or until the cream puffs are golden brown and puffed up.
  7. Once baked, remove from the oven and let the cream puffs cool completely.

For the Filling:

  1. In a large mixing bowl, combine the heavy cream, vanilla pudding mix, and milk.
  2. Beat the mixture using an electric mixer until it thickens to a consistency similar to whipped cream.

To Assemble:

  1. Once the cream puffs have cooled, carefully slice each one in half.
  2. Generously fill the cream puffs with the prepared filling.
  3. Lightly dust with powdered sugar before serving.
