Mississippi Mud Cake 🍫

Ingredients
- 1 cup (2 sticks) unsalted butter, melted
- ½ cup unsweetened cocoa powder
- 2 cups granulated sugar
- 4 large eggs
- 1½ cups all-purpose flour
- 1 tsp baking powder
- ¼ tsp salt
- 1 cup chopped pecans (optional)
- 1 tsp vanilla extract
- 1½ cups mini marshmallows (or more to cover cake)
Chocolate Frosting
- ½ cup butter (1 stick)
- ¼ cup cocoa powder
- ⅓ cup milk
- 1 tsp vanilla extract
- 3½ cups powdered sugar
Instructions
- Preheat oven: to 350°F (175°C). Grease a 9×13-inch baking dish.
- Make the batter: In a large bowl, combine melted butter and cocoa powder until smooth. Whisk in sugar and eggs until well blended.
- Add flour, baking powder, salt, vanilla, and pecans. Stir until just combined — don’t overmix.
- Bake: Pour into prepared dish and bake 30–35 minutes or until a toothpick inserted comes out mostly clean.
- Add marshmallows: Immediately after removing from oven, sprinkle marshmallows evenly over the hot cake. Return to oven for 2–3 minutes, just until they puff slightly. Remove and cool.
- Make frosting: In a saucepan over medium heat, combine butter, cocoa, and milk. Heat until just boiling, then remove from heat and whisk in vanilla and powdered sugar until smooth.
- Pour frosting: Spread warm frosting over the marshmallow layer while still soft. Let set for at least 30 minutes before cutting.
Tips 🍫:
- For extra richness, add a handful of chocolate chips on top of the marshmallows before pouring frosting.
- Best served slightly warm with a scoop of vanilla ice cream!
- Can be made a day ahead — store covered at room temperature.
