Mini Meatloaf with Potatoes

Mini Meatloaf with Potatoes

A hearty and comforting slow cooker meal that’s easy and full of flavor.

Ingredients

  • 1 lb (450g) ground beef
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1 small onion (finely chopped)
  • 4–5 potatoes (cut into chunks)
  • 1/2 cup ketchup or BBQ sauce
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix ground beef, breadcrumbs, egg, onion, salt, and pepper.
  2. Shape the mixture into small mini meatloaves.
  3. Place potato chunks at the bottom of the slow cooker.
  4. Arrange mini meatloaves on top of the potatoes.
  5. Spread ketchup or BBQ sauce over the meatloaves.
  6. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  7. Serve hot with the potatoes.

Tip

Add carrots or garlic for extra flavor.
