Ingredients:
- 1 lb ground beef (or substitute with ground turkey or chicken)
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup milk
- 1/4 cup ketchup (plus extra for topping)
- 1 large egg
- 1 small onion, finely chopped
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Cooking spray
Instructions:
- Preheat your oven to 375Ā°F (190Ā°C). Lightly coat a 12-cup muffin tin with cooking spray.
- In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, milk, ketchup, egg, onion, garlic powder, oregano, salt, and black pepper. Mix thoroughly using your hands or a spoon until the ingredients are well incorporated.
- Evenly divide the meat mixture into the prepared muffin tin, gently pressing the mixture into each cup.
- Brush the tops of each mini meatloaf muffin with an extra layer of ketchup for added flavor.
- Bake for 20-25 minutes, or until the muffins are cooked through and golden brown on top.
- Once baked, allow the mini meatloaf muffins to cool slightly before removing them from the tin. Use a knife or spatula to carefully lift them out.
