How could I almost forget about National Taco Day this year?! I might be a bit late to the celebration, but I couldn’t miss the opportunity to share this amazing Taco Lasagna recipe with you. After all, in my world, every day is taco day—what about you?

Now, I must confess: this isn’t exactly a traditional lasagna. It’s more of a taco casserole layered with tortillas, but I like to call it “taco lasagna” because the layered structure reminds me of a lasagna. Does that make sense? Either way, this recipe is the ultimate comfort food—perfect for those moments when indulgence is key!

Ingredients

  • 12–13 soft 6-inch flour tortillas
  • 2 lbs ground beef
  • 2 packets taco seasoning
  • 2 cups diced tomatoes
  • 1 cup diced red onions
  • ½ cup diced green onions
  • ¼ cup chopped jalapeños (optional)
  • Kosher salt to taste
  • 2 cups heavy whipping cream
  • ½ stick butter
  • 3 cups shredded taco cheese or Mexican-style cheese
  • 1 ½ tsp Cajun seasoning
  • Sour cream (for garnish)
  • Diced green onions (for garnish)

Preparation

  1. In a small bowl, mix the red onions, green onions, jalapeños (if using), tomatoes, and a pinch of salt. Set aside.
  2. In a large skillet, brown the ground beef and drain any excess grease. Stir in the taco seasoning.
  3. In a medium pot, bring the heavy cream and butter to a boil, stirring until the mixture thickens. Remove from heat and add 2 cups of shredded cheese, along with the Cajun seasoning. Keep warm.
  4. In a 9 x 13 casserole dish, layer the ingredients: start with 4 tortillas (cut to fit the bottom of the dish), followed by the seasoned beef, the cheese sauce, and the tomato mixture. Repeat the layering until you’ve created 3 layers, finishing with a generous layer of the cheese sauce on top.
  5. Top the casserole with the remaining cup of shredded cheese. Cover with foil and bake in a preheated oven at 400°F (200°C) for 20 minutes.
  6. Once baked, remove the foil and allow the casserole to cool slightly. Garnish each serving with sour cream and diced green onions. Serve and enjoy!
