Mexican Casserole

Mexican Casserole 😋

Ingredients

  • 1 pound lean ground beef
  • 1 can Ranch Style beans
  • 1 (10–12 oz) bag tortilla chips, crushed (use as needed)
  • 1 can Ro-tel tomatoes
  • 1 small onion, chopped
  • 2 cups shredded cheddar cheese, divided
  • 1 package taco seasoning
  • 1 can cream of chicken soup
  • 1/2 cup water
  • Sour cream and salsa for serving

Directions

  1. Preheat oven to 325°F (165°C).
  2. In a large skillet, brown the ground beef and drain excess fat.
  3. Stir in Ranch Style beans, Ro-tel tomatoes, chopped onion, taco seasoning, cream of chicken soup, and water.
  4. Simmer on medium-low heat until fully combined and heated through.
  5. Grease a 9×13 casserole dish.
  6. Add a layer of crushed tortilla chips.
  7. Add a layer of the meat and bean mixture.
  8. Sprinkle half the cheddar cheese on top.
  9. Repeat the layers one more time.
  10. Cover with foil and bake 20–30 minutes or until bubbly.
  11. Let rest 5–10 minutes before serving.
  12. Top with sour cream and salsa.

Notes

  • Add jalapeños or green chiles for extra heat.
  • Swap beef for shredded chicken or turkey.
  • Great for meal prep—leftovers reheat well.
