Marry Me Chicken (Creamy Sun-Dried Tomato Skillet)
Golden chicken drenched in a silky Parmesan-tomato cream sauce—amazing over mashed potatoes, pasta, or polenta.
Ingredients
- 4 chicken breasts or 6 thighs (boneless/skinless)
- Salt, pepper, 1/2 tsp garlic powder
- 2 tbsp flour (optional dredge)
- 1 tbsp olive oil + 1 tbsp butter
- 3–4 garlic cloves, minced
- 1/2 cup chicken broth
- 3/4 cup heavy cream
- 1/3 cup sliced sun-dried tomatoes (+ 1–2 tsp oil from the jar)
- 1/2 cup grated Parmesan
- 1/2 tsp red pepper flakes • 1 tsp Italian seasoning
- Fresh basil/parsley, chopped; lemon wedge (optional)

Chef Tips
- Add a handful of baby spinach with the cream for extra greens.
- Too thick? Loosen with more broth or a splash of pasta water.
- Want smokier depth? Add 1 tsp Dijon or a pinch of smoked paprika.
Directions
- Season & Sear: Season chicken; lightly dredge if using. Sear in olive oil + butter 3–4 min/side until golden. Remove to a plate.
- Sauce Base: Sauté garlic 30 sec. Add broth; scrape fond. Stir in cream, sun-dried tomatoes + a little jar oil, Parmesan, red pepper flakes, and Italian seasoning. Simmer 2 min.
- Finish: Return chicken and juices; simmer 5–8 min until cooked through and sauce is velvety.
- Serve: Stir in basil, add a squeeze of lemon, and spoon over potatoes, pasta, or rice. Enjoy immediately.
