Mango Tapioca Pudding

🥭 Mango Tapioca Pudding

“My Nana and aunties used to make this when I was young, but it turns out the recipe was never written out.
This version brought back all the memories — simple, creamy, and delicious!”

Ingredients

  • ½ cup small pearl tapioca
  • 2 cups water
  • 1 ½ cups coconut milk (or evaporated milk)
  • ½ cup sugar (adjust to taste)
  • 1 cup ripe mango puree
  • ½ cup fresh mango cubes (for topping)
  • Pinch of salt

Instructions

  1. Cook Tapioca: Boil water in a saucepan, add tapioca pearls, and cook until translucent (about 15 minutes). Stir occasionally. Drain and rinse with cold water.
  2. Make the Base: In a clean pot, combine coconut milk, sugar, and salt. Simmer on low until sugar dissolves.
  3. Add Tapioca: Stir in the cooked tapioca pearls and let simmer for another 5 minutes.
  4. Add Mango: Mix in mango puree. Adjust sweetness if needed.
  5. Chill & Serve: Pour into bowls, let cool, then refrigerate until set. Garnish with fresh mango cubes before serving.
