Instructions:

- Make the Roux: Gradually blend in the flour, stirring continuously to form a roux. Allow it to cook for approximately 2 minutes, ensuring the flour is fully incorporated with the butter and vegetables.
- Heat the Milk: In a separate pan, gently warm the milk over medium heat until it reaches a moderate temperature.
- Combine: Slowly stir the warmed milk into the roux mixture, cooking and stirring until the mixture thickens to a smooth consistency.
- Enhance with Cream and Seasoning: Add the black pepper, tomato paste, and heavy cream, stirring well to combine. At this point, you may choose to puree the soup in a blender for a smoother texture, then return it to the pan.
- Incorporate the Seafood: Stir in the crab meat, shrimp, and sherry wine, gently bringing the bisque to a simmer. Continue cooking for several minutes until heated through and well-blended.
