Lemon Cake That Will Leave You Speechless
Ingredients
For the Cake:
- 1 package yellow cake mix
- 1 package instant lemon pudding mix
- ā cup vegetable oil
- 3 large eggs
- ā cup water
- 1 teaspoon vanilla extract
- 1 teaspoon lemon zest
For the Glaze:
- 2 cups powdered sugar
- 2 tablespoons unsalted butter, melted
- 2 tablespoons heavy whipping cream
- Ā¼ cup lemon juice
- 1 teaspoon lemon zest
Instructions
- Preheat your oven to 350Ā°F (175Ā°C) and grease a 9×13-inch baking pan.
- In a large mixing bowl, combine the cake mix, lemon pudding mix, vegetable oil, eggs, water, vanilla extract, and lemon zest. Mix until well combined and smooth.
- Pour the batter evenly into the prepared baking pan. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan on a wire rack for a few minutes.
- While the cake cools, prepare the glaze. In a bowl, whisk together the powdered sugar, melted butter, heavy whipping cream, lemon juice, and lemon zest. Adjust the consistency by adding more lemon juice if needed.
- Once the cake is slightly cooled, pour the glaze over the top, spreading it evenly.
- Let the cake set until the glaze firms up slightly before serving.
