Lemon Cake That Will Leave You Speechless

Ingredients

For the Cake:

  • 1 package yellow cake mix
  • 1 package instant lemon pudding mix
  • ⅔ cup vegetable oil
  • 3 large eggs
  • ⅔ cup water
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest

For the Glaze:

  • 2 cups powdered sugar
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons heavy whipping cream
  • ¼ cup lemon juice
  • 1 teaspoon lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a large mixing bowl, combine the cake mix, lemon pudding mix, vegetable oil, eggs, water, vanilla extract, and lemon zest. Mix until well combined and smooth.
  3. Pour the batter evenly into the prepared baking pan. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
  4. Allow the cake to cool in the pan on a wire rack for a few minutes.
  5. While the cake cools, prepare the glaze. In a bowl, whisk together the powdered sugar, melted butter, heavy whipping cream, lemon juice, and lemon zest. Adjust the consistency by adding more lemon juice if needed.
  6. Once the cake is slightly cooled, pour the glaze over the top, spreading it evenly.
  7. Let the cake set until the glaze firms up slightly before serving.
