Lazy Sunday 3-Ingredient Pulled Chicken (Slow Cooker)

Just chicken, BBQ sauce, and pineapple—ridiculously easy, crazy delicious.

 

Ingredients

  • 2–2½ lb boneless, skinless chicken breasts or thighs
  • 1 (18 oz) bottle BBQ sauce (your favorite)
  • 1 (20 oz) can pineapple tidbits with juice

Optional (not counted)

  • ½ onion, diced
  • Splash of soy sauce or apple cider vinegar
  • Pinch of chili flakes or black pepper

Instructions

  1. Add chicken to the slow cooker. Pour in BBQ sauce and the entire can of pineapple with juice; stir to coat.
  2. Cover and cook LOW 6–7 hrs or HIGH 3–4 hrs until the chicken shreds easily.
  3. Shred with two forks right in the pot, stir back into the sauce, and let it sit 10 minutes to soak up flavor.
  4. Taste; add salt/pepper or a dash of vinegar if you like it tangier. Serve hot.

Tips & Swaps

  • Crispier edges: Broil shredded chicken on a sheet pan 3–4 minutes, then fold back into sauce.
  • No pineapple? Use a 12 oz can of cola or root beer instead—still just 3 ingredients.
  • Instant Pot: 10 minutes High Pressure, quick release; shred and simmer on Sauté to thicken.
  • Serve with: buns for sandwiches, over rice or baked potatoes, or in tacos with slaw.
  • Storage: Refrigerate 4 days or freeze up to 3 months.
